Hello again! Can you believe this week is over already? I don’t know if it’s all the packing we’ve been doing, the preparation for M’s and my impending work trips, or the million other things on my to-do list this week, but it sure went by fast.
Friday it is, though, and that means another round of things I’m loving lately! Enjoy!

1.) This video of a woman making kimchi from scratch
Anyone interested in international, and particularly Asian, cuisines will enjoy this short, pretty video that shows the labor of love that goes into making traditional Korean kimchi. From selecting the cabbage, to fermenting it with spices, to creating a dish with the finished product, it’s a five minute love letter to traditional cooking. There’s no dialogue, so you can just enjoy the art of the process.

I have spent most of my life being terrible at sleeping on any moving vehicle. While M can hop on a plane and sleep through take-off (and landing), I always struggled with getting comfortable enough to catch three or four winks, let alone forty. As an avid traveler, this has been my Achilles heel; red-eye flights were miserable, long car rides were trying, and those 24+ hour bus rides in South America were absolutely torturous.
Two years ago, however, M discovered these neck pillows and we purchased two before a red-eye flight to Scotland. Friends, I didn’t know what I was missing. This little buddy now goes along with me on every trip, and it has been such a lifesaver as my freelance gig involves early-morning flights at least once a month. I love that this pillow is inflatable via a little pump, meaning that I don’t have to huff and puff to blow it up myself. It also folds up for easy packing and takes up minimal space in your carry-on. The cover is removable and machine washable for easy cleaning; I don’t know about you, but I always feel gross after a flight and want to sanitize everything that came in contact with any surface whatsoever. The design is meant to cradle your head, making it more comfortable than other, flat pillows for a sitting-up sleeper like M . (Personally, I tend to either curl into a ball against the window or prop the pillow on the tray table, but the shape seems to work well for that, too.)
If you have trouble sleeping on planes, I recommend picking up this or a similar design of neck pillow. It truly made all the difference for me. Sweet dreams!
3.) Another Penn State NCAA Wrestling Championship!
While M is all about the March Madness, I am all about the March Matness of the NCAA National Wrestling Championships. People are usually surprised to learn that I am a huge wrestling fan, and not the WWE kind. It all started back in high school; I am from a small town in the middle of Pennsylvania where wrestling was a big deal. Families would move to our area so that their boys could wrestle for our high school, and when I was a sophomore our wrestlers became the first team in school history to win a state championship in any sport. I was there, and I definitely cried with joy.
When he realized that I really enjoyed watching the sport, my dad started taking me (and often my friends Maggie and Courtney) along to tournaments across the state. I learned Pennsylvanian geography based on where high schools with good wrestling programs were located and spent many a winter Saturday in stuffy high school gyms filling out brackets and cheering on my favorites. Attending wrestling events became a our father-daughter tradition and the love of the sport is still a very special part of my relationship with my dad.
As I got older, our focus on high school wrestling shifted in favor of college. My grandfather and uncles were ardent supporters of the Penn State program, so we seamlessly transitioned to following the Nittany Lions… and what a ride it has been! Last Saturday night, Penn State won their seventh wrestling championship in eight years with an incredible move and pin by junior Bo Nickal over Myles Martin from Ohio State, who had defeated him in the national championships two years earlier (I was there for that, too).

I came out of my seat at M’s cousins’ house (they were kind enough to oblige me when I asked to watch the finals instead of basketball) and my group text with my dad and sister blew up. My March Madness bracket may be a depressing sea of red (what is going on this year?!), but I’ll be on a high for weeks from this victory!
